If you’ve been following the Zero Food Waste Office Challenge, this lunch is very to assemble, you practically have everything ready made for you, you just need to get things out from the fridge and put them in a air tight box, simples. This meal is prepared on SUNDAY and eaten on TUESDAY.
If you haven’t already made the hummus or wraps, you can follow both recipes and come back to this meal. I really like this meal as a lunch when I am travelling, as it’s filling and easy to shove in your gob when you’re on a train.
Assembling the wrap
1. Take one of the pre made wraps from Sunday. Spread half of your Carlin pea hummus down the centre of the wrap. Save the other half of your hummus for tomorrow
2. Add salad ingredients like tomatoes, lettuce and chopped carrot
3. Next, add a handful of any roast vegetables
4. Fold edges of wrap inwards and place in your Tupperware box.
